Although I cook professionally for a living I still evoke great pleasure from cooking at home for my lovely wife and I. We really appreciate eating great food together at the table which is something that we endeavour to do whenever I am not working. We also often have friends for dinner and it gives me great opportunities to practise dishes that I am working on. Sometimes we may have an elegant banquet or other times we may have something quite simple, such as sausages and mash, cottage pie or a good old English roast dinner. I attain massive inspiration from to cooking with Asian spices, fusing them with British ingredients or making many different curry dishes. I make everything from fresh spices and produce and always enjoy entertaining and have blogged many of our dinners at home under their dish title names. Beef fillet strips, chopped garlic, onions, peppers, tomatoes, dijon mustard, paprika, brandy and cream, finished with lemon juice and fresh herbs. Served with roasted maris piper potato wedges and grilled asparagus spears.
Home made cheese and bacon burgers.
Burgers and chips are a great favourite of mine and I like to serve them up with a bit of a twist. I made these burgers with good quality lean minced beef, fresh red chilli, fresh chopped coriander and basil, diced spring onion, toasted cumin seed and plenty of cracked black pepper. I seasoned them with sea salt during cooking so as not to draw out the moisture too early. Avoid over mixing them as this can cause them to go rubbery in texture. I added crispy bacon and melted cheese when cooked and served them in toasted ciabatta bread. They were accompanied with oven roasted potato wedges, seasoned with dried chili, paprika, oregano, black pepper and sea salt. Fresh rocket salad, sliced baby plum tomatoes and caramelised red onions went great in the middle of the table for us to help ourselves. Don't forget the ketchup and beer!
Fajitas, Beef, Chicken and king prawns.
I cooked up some great fajitas the other night round friends. A great dish to go in the middle of the table and for everyone to dig in and help themselves. I made my own marinade with fresh ingredients, using red chili, cumin and coriander seed, garlic, oregano, paprika and lime. I char grilled a beautiful beef rump steak, chicken thighs, king prawns and saute peppers, onions, tomatoes so we could mix and match. We also had some great freshly made guacamole, red pepper and coriander salsa, soured cream, braised rice, salad, grated cheese and flour tortilla wraps.
